Homemade Potatoes Croquettes

Ingredients:

800 g of potatoes
120 g Tasty cheese from Eatlean (or any other cheese you have at home)
salt
white pepper
nutmeg
2 yolks
2 eggs
bread crumbs with garlic and parsley or plain breadcrumbs
extra virgin olive oil

Instructions:


We start our recipe for potato croquettes and cheese by washing the potatoes very well.

We put a pan with water on the fire at maximum temperature (9 out of 9 that has my plate).

When the water is boiling, put in the potatoes with skin. Lower the heat to medium (6 over 9) and put the lid.

These potatoes will be about 25 or 30 minutes, approximately. The time will depend on the size of the potatoes.

So they should be similar, as close in size as possible.

That way we will get them all cooked at once.

After time, uncork and prick with a knife or fork. If it comes in and out easily, the potatoes will be ready.

We take them out of the pan and let them cool to peel without burning.

After removing the skin, we cut them into pieces for the potato and cheese croquettes.

Scoop them with a potato masher or a potato masher. Then, season them with salt and add nutmeg.

You can use spices to taste.

Grate the cheese and add it with the egg yolks (without the whites, these can be frozen for use in another time).

Mix to integrate all the ingredients very well until you get a uniform mass. Now, we shape the potato croquettes.

We soak our hands in a little olive oil. Take portions of about 35 g and make the croquettes.

We are placing them on a tray and when we have all ready, we pass them through egg and breadcrumbs.

On this occasion I have used a bread crumbs with garlic and parsley that gives it a very interesting flavor point.

If your bread is normal, you can add parsley and garlic to the dough if you want.

It is necessary that the potato croquettes are well passed through the bread on all sides and that we give them the final form.

Place a pan or pan with oil on the fire and wait for it to be a little hot, 180o, approximately.

We introduce the croquettes in small batches so that the temperature does not drop. We only need about 10-15 seconds to brown the bread.

A trick is to use a skimmer and make them 1 in 1. With the bread, we take out our potato and cheese croquettes.

Put them in a tray with kitchen paper to remove excess oil.
